Q: Staggered or square: which 21-inch UP-05 setup should I run?

Go staggered, 21×9.5 front and 21×10.5 rear, for the most aggressive stance and extra rear traction under acceleration. Go square, 21×10.5 on 285/40 at all four corners, for the most consistent grip front to rear and the ability to rotate tires for longer life. Both come complete with sensors and balancing. Your call comes down to stance versus long-term tire economy.
